Meet your hosts
Chef James Carr
James’ cooking is relaxed, thoughtful and rooted in great produce, with a natural instinct for bringing together unexpected flavours without overcomplicating things.
His style draws on Japanese influences, seasonality and a strong connection to the outdoors, but ultimately it’s about cooking with feeling, understanding an ingredient, respecting where it comes from and knowing when to leave it alone.
Through his business cooked over coal, James champions local and seasonal produce, working closely with growers and producers and keeping that journey from source to plate as simple as possible.
There’s a laid-back, generous quality to his food. Nothing feels too forced or formal just well-sourced ingredients, considered cooking and food that’s made to be shared.
For James, cooking is as much about the experience and the people around the table as it is about what’s on the plate.
Tom Cozens
Tom has spent his entire career as a food and beverage professional, more specifically in global beverage innovation.
Developing innovations into the Specialty beverage and equipment scene, new approaches to coffee culture, but also innovation for some of the biggest beverage companies in the world.
But, what makes him happy? People, sharing, experiences, hosting, amazing products, craft, collaboration and creative exploration.
The Martini, in Tom's opinion, is the best cocktail ever invented. His favourite? sometimes. but it is always "the best".
If you know, you know.
Why? "Because it is so simple, possibilities seem endless, but it is also so easy to fuck up. It makes you think, discuss and discover something new."
Why Martini Club?
"Why not? James and I have mulled over collaborating on hosting high level tasting menus, table service, experiential evenings for well over a year. Life got in the way, and I only wanted to start this if partnered with James"
